Chicken is my joie de vivre. I can eat chicken every single day and not get bored. I am one of those people that goes to a restaurant and eat all the variations of chicken they have.
It also one of the easiest things to cook because you can do so much with chicken. Kienyeji chicken is a story for another day.
For this recipe, we will be using broiler chicken. We are making KFC styled chicken, of course, it is my take on it. I made it when we did not have spices in the house so I had to improvise.
- 1 kg broiler chicken cut into pieces
- 2 teaspoons dark soy sauce
- 1 tablespoon of salt
- 1 tablespoon royco
- 2 tablespoon curry powder
- 1 teaspoon black pepper
- 1 teaspoon mixed spices
- Crushed ginger and garlic
- 1 cup buttermilk (maziwa mala).
- 1 cup all-purpose flour
- Vegetable oil
Place your chicken pieces, soy sauce, garlic, ginger, mixed spices, and buttermilk in a bowl of your choice.
Mix those ingredients together and cover with a cling film let it marinate overnight or for three hours.
Place your flour on a tray and mix it with curry powder, royco, salt, and black pepper. I did not have paprika which is an ideal ingredient for this recipe.
Take out your chicken and drain the mixture. You can actually use the marinade again for cooking so you can store it in the freezer.
Heat your oil in the pan you will be using to fry the chicken, make sure that the oil is hot. Proceed to coat your chicken with the flour mixture.
Place it carefully in the oil and let it fry for 3 minutes on each side.
I usually start with the bigger pieces first.
Voila, your little KFC heaven at home is ready. Best served with fries, salad or a dip of your choice. I used rosemary and spring onions as garnish.
